Strawberry and Coconut Milk Popsicles

Light, fruity treat is low in calories and high in deliciousness. Plus, the frozen dessert is dairy-free and vegan! 

Ingredients

  • 2 cups fresh strawberries 
  • 1/2 can of full-fat, 13.5-oz. coconut milk
  • 1 TB agave syrup 
  • Optional: garnish with chopped pistachios, cacao nibs, raspberries, shredded coconut or other favorite toppings

Directions

  • Thoroughly wash and dry the strawberries and remove the stems. Place the strawberries in a blender with the coconut milk and agave syrup. Blend until the mixture is smooth. 
  • Pour the fruity mixture into popsicle molds and add holders. Place molds in the freezer and freeze for roughly 4 hours or overnight until the popsicles are frozen throughout. 
  • Once the popsicles are fully frozen, remove them from the freezer and their molds. If the popsicles are stuck, run them under slightly lukewarm water until they slip out of the molds. 
  • Consider topping the frozen treats with chopped pistachios, cacao nibs, raspberries, shredded coconut or other favorite toppings.
