Spicy Cucumber Salad Ingredients

  • 2 large Persian cucumbers, thinly sliced (1lb)
  • 1 teaspoon kosher salt
  • 2 or 3 scallions, thinly sliced
  • 1/2 cup fresh mint leaves, roughly chopped
  • 1/4 cup fresh basil leaves, roughly chopped
  • 1/4 cup roasted peanuts, coarsely crushed
  • 1 jalapeño, thinly sliced (optional)

What to buy at the store?

  • 4 (6-ounce) salmon fillets, skin on
  • 1 tablespoon olive oil
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 2 cups fresh corn kernels (from 2 to 3 ears)
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions for the Spicy Cucumber Salad

Step One: Make the dressing.

In a small bowl, stir together the lime juice and sugar until the sugar dissolves. Mix in the sesame oil, fish sauce, and the Thai and jalapeño.

Step Two: Combine the ingredients.

In a serving bowl, lightly salt the cucumbers and scallions and toss. Pour the dressing over the cucumbers and mix well.

Step Three: Chill and Serve

Refrigerate the salad for about 30 minutes to chill. Before serving, top with fresh mint, basil, cilantro, and crushed peanuts.

Instructions for the Simple Salmon

Step One: Turn up the heat.

Turn on the broiler and place an oven rack in the upper third of the oven. On a baking sheet, toss the corn with 1 tablespoon of oil, salt, and pepper. Move the corn to one side of the pan.

Step Two: Cook the Salmon and Corn

Place the salmon, skin-side down, on the empty side of the baking sheet. Season the salmon with salt and pepper, then spread a thin layer olive oil over the top. Broil for 6 to 8 minutes, stirring the corn occasionally, until the salmon is cooked through and the corn is lightly browned.

Step Three: Finish the Relish

Add the tomatoes, scallions, and the remaining tablespoon of oil to the corn on the pan. Zest the lime over the vegetables, then squeeze the juice from half the lime over the mixture. Stir to combine and season with salt and pepper. Top with fresh basil.

Step Four: Serve

Serve the salmon with the corn relish. Use the remaining lime half, cut into wedges, for serving. To easily remove the skin, slide a spatula between the salmon and the skin after cooking.
