- 2 medium russet potatoes (about 1.5 lbs), cut into ½-inch cubes
- 1/4 cup sliced green onions, plus more for garnish
- 3 cloves garlic, minced
- 1 Tbsp. paprika
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 cups shredded Cheddar cheese
- 10 large eggs
- 1 avocado, sliced
- Hot sauce, for serving (optional)
Instructions
Step One: Cook the Bacon
Place the bacon in a large cast-iron or non-stick skillet over medium heat. Cook, turning occasionally, until crispy, about 8-10 minutes. Transfer the bacon to a paper towel-lined plate to drain. Once cooled, chop it into bite-sized pieces. Pour off all but 2 tablespoons of the bacon fat from the skillet.
Step Two: Cook the Potatoes
Return the skillet with the reserved bacon fat to medium heat. Add the cubed potatoes in a single layer. Cook undisturbed for 10-12 minutes, allowing the bottoms to become golden brown and crispy. Flip the potatoes and continue to cook, stirring occasionally, for another 10 minutes.
Step Three: Add the Flavor
Add the sliced green onions and cook for 2 minutes until slightly softened. Stir in the minced garlic and paprika, and cook for 1 minute more until fragrant. Season generously with salt and pepper.
