What to buy at the store?

  • 8 slices thick-cut bacon
  • 2 medium russet potatoes (about 1.5 lbs), cut into ½-inch cubes
  • 1/4 cup sliced green onions, plus more for garnish
  • 3 cloves garlic, minced
  • 1 Tbsp. paprika
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 cups shredded Cheddar cheese
  • 10 large eggs
  • 1 avocado, sliced
  • Hot sauce, for serving (optional)

Instructions

Step One: Cook the Bacon

Place the bacon in a large cast-iron or non-stick skillet over medium heat. Cook, turning occasionally, until crispy, about 8-10 minutes. Transfer the bacon to a paper towel-lined plate to drain. Once cooled, chop it into bite-sized pieces. Pour off all but 2 tablespoons of the bacon fat from the skillet.

Step Two: Cook the Potatoes

Return the skillet with the reserved bacon fat to medium heat. Add the cubed potatoes in a single layer. Cook undisturbed for 10-12 minutes, allowing the bottoms to become golden brown and crispy. Flip the potatoes and continue to cook, stirring occasionally, for another 10 minutes.

Step Three: Add the Flavor

Add the sliced green onions and cook for 2 minutes until slightly softened. Stir in the minced garlic and paprika, and cook for 1 minute more until fragrant. Season generously with salt and pepper.

Step Four: Melt the Cheese

Sprinkle the shredded cheddar cheese evenly over the potatoes. Cover the skillet with a lid for 1-2 minutes to allow the cheese to melt completely.

Step Five: Scramble the Eggs

While the cheese is melting, scramble the eggs in a separate pan to your desired doneness.

Step Four: Assemble the Bowls

Divide the cheesy potatoes among four bowls. Top each bowl with a portion of the scrambled eggs, sliced avocado, and chopped bacon. Garnish with extra green onions and serve immediately with a drizzle of hot sauce, if desired.
