Ingredients
- 1 (12 oz.) package of frozen edamame pods (soybeans)
- 2 T olive oil
- 2 garlic cloves, minced
- 1 tsp. sea salt
- ½ tsp. ground black pepper
- Spicy option: sprinkling of chili powder or red pepper flakes
Directions
- Preheat the oven to 375°F.
- Toss edamame along with olive oil, garlic, sea salt and pepper in a large bowl until the edamame is well coated. Spread the edamame on a baking sheet in a single layer.
- Spicy option: Sprinkle chili powder or red pepper flakes lightly in this mix, if desired.
- Roast the edamame in the oven, stirring after 10 minutes. Continue roasting another 10 minutes until the edamame shells start to brown.
- Remove from oven and serve the edamame whole, popping the beans out of the shell to eat.
