This classic creamy corn soup is just that, a dish that both nourishes and comforts. While this recipe is a classic, it’s also easily adaptable. For a lighter version, you can swap the half-and-half for whole milk or use a base of olive oil instead of butter. To make it vegetarian, simply use vegetable broth. Instructions

Step One: Sauté Vegetables

Instructions

Step One: Cook the Bacon

Place the bacon in a large cast-iron or non-stick skillet over medium heat. Cook, turning occasionally, until crispy, about 8-10 minutes. Transfer the bacon to a paper towel-lined plate to drain. Once cooled, chop it into bite-sized pieces. Pour off all but 2 tablespoons of the bacon fat from the skillet.

Step Two: Cook the Potatoes

Return the skillet with the reserved bacon fat to medium heat. Add the cubed potatoes in a single layer. Cook undisturbed for 10-12 minutes, allowing the bottoms to become golden brown and crispy. Flip the potatoes and continue to cook, stirring occasionally, for another 10 minutes.

  • 4 (6-ounce) salmon fillets, skin on
  • 1 tablespoon olive oil

  • 1/2 red onion, finely chopped

Instructions for the Spicy Cucumber Salad

Step One: Make the dressing.

In a small bowl, stir together the lime juice and sugar until the sugar dissolves. Mix in the sesame oil, fish sauce, and the Thai and jalapeño.

Step Two: Combine the ingredients.

In a serving bowl, lightly salt the cucumbers and scallions and toss. Pour the dressing over the cucumbers and mix well.

Step Three: Chill and Serve

Refrigerate the salad for about 30 minutes to chill. Before serving, top with fresh mint, basil, cilantro, and crushed peanuts.

Instructions for the Simple Salmon

Step One: Turn up the heat.

Turn on the broiler and place an oven rack in the upper third of the oven. On a baking sheet, toss the corn with 1 tablespoon of oil, salt, and pepper. Move the corn to one side of the pan.

Step Two: Cook the Salmon and Corn

Place the salmon, skin-side down, on the empty side of the baking sheet. Season the salmon with salt and pepper, then spread a thin layer olive oil over the top. Broil for 6 to 8 minutes, stirring the corn occasionally, until the salmon is cooked through and the corn is lightly browned.

Step Three: Finish the Relish

Add the tomatoes, scallions, and the remaining tablespoon of oil to the corn on the pan. Zest the lime over the vegetables, then squeeze the juice from half the lime over the mixture. Stir to combine and season with salt and pepper. Top with fresh basil.

Step Four: Serve

Serve the salmon with the corn relish. Use the remaining lime half, cut into wedges, for serving. To easily remove the skin, slide a spatula between the salmon and the skin after cooking.

Cut Watermelon into 1-inch cubes and chilled, partially peel Cucumbers (in stripes) and cut into bite-sized half-moons, Thinly slice Red Onion, and roughly chop Fresh Mint.

Step Two: Mellow the Onion

Place the thinly sliced red onion in a small bowl of ice water for about 10 minutes while you prepare the other ingredients. This removes some of its harsh bite, leaving a crisp, sweet flavor. Drain well before using.

Step Three: Prepare the dressing

In a small bowl or jar, whisk together the olive oil, fresh lime juice, optional honey, and black pepper until well combined. Set aside.

Step Four: Combine the Salad Ingredients

In a large, shallow serving bowl, gently combine the chilled watermelon cubes, cucumber slices, drained red onion, and most of the fresh mint (save a little for garnish).

It was crafted from 20,000 lengths of Douglas Fir, molded into a fluid, natural shape. It’s a space that feels both high-tech and deeply human.

Every detail is designed around the patient. Exam rooms are big enough for family members. Microphones in the ceiling let doctors have a natural conversation with you while a scribe documents everything from another room, freeing the physician to focus entirely on you. The building even won design awards in its very first year, demonstrating that the space itself played a key role in the innovation.
